CULA 2220 - Food Service Management

Provides the advanced student practical details related to all aspects of setting up and running a restaurant, cafeteria, or institutional food service operation Included will be training related to basic management principles, and practices of successful food service operations purchasing and inventory management, facility design, standardized recipes, cost control techniques, food handling for health and safety, and employee management.
Prerequisite: CULA 1200 field experience or with permission of instructor
